Dead Simple Cheesy Enchiladas

If you love cooking up recipes that don’t take a lot of time or effort than this one is going to suit you perfectly.

It’s a great little recipe for enchiladas which are definitely one of my favorite Mexican dishes.

Like most simple recipes, it’s very easy to expand on this recupe and customise it with different ingredients that you like including in your Mexican meals.

Ingredients

1 pound ground beef
8 oz’s cheddar cheese, shredded
8 oz’s Mexican cheese blend, shredded
2 x 10 oz cans enchilada sauce
12 flour tortillas

Directions

  1. Preheat your oven to 375°F/190°C.
  2. Add your ground beef to a skillet and cook over medium heat before draining excess juices.
  3. Combine the two different types of cheese and mix together.
  4. Stir through 3/4 cup of the enchilada sauce along with one cup of the cheese blend.
  5. Spoon beef mixture into each tortilla and roll them, before placing seam down in a pre-greased baking dish.
  6. Pour remaining enchilada sauce over the top of the rolled enchiladas. and sprinkle the rest of the cheese over the sauce.
  7. Place in the oven and cook for around 15-20 minutes.

Serve with your own preferred sides and garnishes.
