Mexican Cooking – Chorizo with Rice

Chorizo is a spicy Mexican sausage. It is not difficult to find in grocery stores, however, if you can’t find chorizo you may substitute hot Italian sausage. This chorizo and rice recipe can be used as a main dish, side dish or used for a burrito filling.


Chorizo and Rice

Ingredients

1 cup white rice

1 can (14 ounce) Chicken Broth

1/4 lb Beef Chorizo

2 tbs Butter or margarine

1 Onion, medium

1 cup Chopped Tomato

1 cup Corn kernels

1 can (4 0z) Diced Green Chiles

1 tsp Thyme

Fresh Cilantro chopped

Directions

Cook the rice according to the directions on the package using the chicken broth instead of water. Remove the casing from the chorizo and crumble it into a skillet. Cook chorizo until completely done. Remove chorizo from skillet, side aside and drain on paper towel. Leave one tablespoon of the fat in the skillet. Add the butter and onions to the skillet and cook the onions until they are clear. Add to the skillet the cooked rice, chorizo, corn, tomato, green chiles and thyme. Sitr and cook until heated thoroughly. Remove to a serving dish and sprinkle with the fresh cilantro. Serves 6 – 8.
